Four key points for making moldy tofu:
1. Choose Tofu: The tofu used to make molded tofu is even more delicious when made with gypsum water. It is best to have soft tofu. You can't buy gypsum-based tofu in the north, so buy ones that are as tender as possible. If the tofu is too old, it will be very dry and affect its texture and taste;
